Kombucha is a drink made by fermenting tea (Camellia Sinensis) containing sugar, yeast, and probiotic bacteria. To make Kombucha, SCOBY (symbiotic culture of bacteria and yeast) is used that helps to turn the sweet tea into the fermented tea.
There are three basic chemical processes that occur when making Kombucha. First, the yeast breaks down the sugar in tea to glucose and fructose. Second, the glucose and fructose undergo fermentation which produces the alcohol. The equation for understanding fermentation is C6H12O6 (glucose) → 2 C2H5OH (ethanol) + 2 CO2 (carbon dioxide). And lastly, the alcohol is converted into acetic acid by the bacteria.
In the process of fermentation, the pH and temperature of the solution control the rate of the entire process. Bacteria in the kombucha mixture metabolize sugars into lactic acid. This acid along with the acetic acid produced from the alcohol, make the mixture more acidic, lowering the pH. Having a low pH is extremely important because low pH prevents the growth of certain types of bacteria associated with food spoilage.
The first fermentation happens in an open container lightly covered with a cloth. The second fermentation happens in sealed containers, which capture carbon dioxide and make this wonderful brew fizzy.
The beverage contains beneficial polyphenols (antioxidants) derived from the tea, organic acids produced through fermentation by the G.xylinus, and if raw, viable cultures to contribute to the human microbiome. The microorganisms also produce enzymes and amino acids.
